Tuna and artichoke spread

Ingredients
Makes about 30 crackers

10oz canned good quality tuna in oil (we like Italian, of course)
5-6 pieces small artichokes in oil, roughly chopped
3 tbsp mayonnaise
1 ½ tsp freshly grated orange zest
5 tbsp Cardum Extra Virgin Olive Oil
½ cup Castelvetrano olives, pitted and sliced
Salt and pepper
1 box of your favorite gourmet cracker or crostini

Preparation

1. Drain the oil from the tuna.
2. Place the tuna, artichokes, mayonnaise, orange zest and Cardum extra virgin olive oil in a food processor and process on medium speed until a smooth consistency is formed. In the absence of a food processor, mix the ingredients well in a bowl using a fork to break up the tuna. Add salt and pepper to taste.
3. Spread 1 ½ tsp – 1 tbsp (depending on the size of the cracker) and arrange the crackers on a serving dish.
4. Top each cracker with a slice of Castelvetrano olive and serve.
